Romantic Dinner for Two
Chicken & Veggie Fondue with Dipping Sauces
Dark Chocolate Dipped Strawberries

Being married less than two years I have discovered the importance of keeping romance alive.  Instead of waiting for your true love to make you happy with flowers, chocolates, or dinner at a fancy restaurant surprise him with a romantic fondue dinner.  Schedule a date with your loved one with a specific time and location…. patio, dining room, bedroom, hotel room with a kitchenette … anywhere other than your normal dining area.  Spoil yourself with a sexy new outfit or lacy undergarments. Have your hair and nails done prior to your romantic rendezvous. Then prepare this simple meal in advance so the only work during dinner will be keeping your beloved's hands off of you.

The Menu:

Tempting Beginning: chilled grapes and fruit
Wine:  Red (Zinfandel)
Main Course:  Chicken and Veggie Fondue with Dipping Sauces
Sinful Endings:  Strawberries dipped in Dark Chocolate

This is a FUN romantic meal.

Chicken & Veggie Fondue with Dipping Sauces

1 pound of skinless and boneless chicken breasts
2 cups of cauliflower
2 cups of broccoli
Dipping Sauces

Cut the chicken breasts and vegetables into bite-sized portions.  Place the chicken in a serving dish separate from the vegetables.  Refrigerate until ready to serve.  Place your favorite dipping sauces in separate serving dishes.  If you are serving this meal in a hotel room with a kitchenette, bring the chilled food in a cooler.

Suggested dipping sauces:  Peppercorn, honey-mustard, peanut satay, sesame garlic, BBQ, and/or teriyaki sauce.  Purchase these sauces pre-made and keep your special evening simple.

Fondue preparation:  Fill the fondue pot 1⁄2 way with vegetable oil.  Then pour the measured oil into a saucepan on the stovetop and heat the oil to 375 degrees F.  You will know the oil is ready when you drop a piece of bread in and it browns in 30 seconds. Pour the oil back into the fondue pot and light the burner.  Place the chicken, vegetables and dipping sauces around the fondue pot. Start cooking your dinner.  Each piece of chicken should cook in the fondue pot 1-2 minutes each.

Prep time is 15 minutes.  This dinner is low in fat and high in protein.
