Wild Rice
2 cups of water
1 cup of wild rice
Salt and pepper to taste
In a pan, combine the rice and water.  Boil, reduce heat and simmer until the rice is tender, usually 40-45 minutes.  Drain; add seasoning (salt and pepper)

Acorn Squash
5 acorn squash
Cut in half
Scoop seeds out
½ cup of water
Preheat oven to 350 degrees.  Put acorn squash halves cut side down in a baking pan.  Add ½ cup of water and bake under tender (usually 30-50 minutes)

Baked Apples
My husband’s family recipe
12 tart Jonathon Apples
1-½ cups of Brown Sugar
12 tablespoons of a Butter Substitute
6 teaspoons of ground Cinnamon
Preheat oven to 350 degrees.  Core the apples but leave the bottom intact so it looks like a ‘well’ in the apple. Prick the apple skins with a fork so the apple can “breathe” while baking.  Fill the hole with 2 tablespoon of brown sugar and 1 tablespoon of butter substitute butter.  Then place the apples in baking dish with a thin layer of water on the bottom, and sprinkle each apple with cinnamon. 

Bake at 350 degrees for 20 minutes (10 minutes covered with foil and 10 minutes uncovered) until the apples are tender and begin to caramelize. 

You can also add chopped walnuts or pecans to the “stuffing”.  And you may want top this yummy recipe with a low fat frozen vanilla yogurt as a reward for eating such a healthy meal.
